Welcome to Atomic Cowboy, an alluring restaurant located at 3237 E Colfax Ave in the heart of Denver, CO. This hidden gem is where the spirited atmosphere of a modern eatery collides with the comforting familiarity of home-cooked flavors, making it a must-visit for both locals and visitors alike.

At Atomic Cowboy, you can immerse yourself in a unique culinary experience that seamlessly transitions from vibrant breakfast offerings to delightful pizza selections for dinner. Picture this: the sun rises over Denver, filling the air with the intoxicating aroma of freshly baked biscuits. A local favorite is the biscuits and gravy, particularly the mushroom gravy that customer Cecilia Wagner raved about—it’s a rich, savory hug on a plate, perfect for starting your day. Pair it with the fan-favorite Sully Fries, seasoned waffle fries lusciously smothered in gravy, and you have a breakfast to remember.

As the day turns to night, Atomic Cowboy transforms into a pizza paradise. The Fat Sully's Pizza menu presents an array of towering slices that are a feast for the eyes and the stomach. The flavors are bold and generously portioned—whether you prefer classic mozzarella or adventurous toppings, there’s something that will undoubtedly steal your heart. One diner, Asif Rehmani, highlighted the clever dual concept of delicious biscuits by morning and the iconic pizza by night, proclaiming that the pizza slices are best enjoyed individually, allowing for an explosion of flavor with each bite.

Customers find the dining experience elevated by friendly service and a lively atmosphere, evidenced by Dean’s praise for the inviting staff who genuinely care about your dining experience. The upbeat music and artful decor create an ambiance that’s both casual and vibrant—perfect for a relaxed meal with friends or a cozy date night.

Be sure to keep an eye out for their creative cocktail offerings, like the refreshing Strawberry Basil Spritzer and the musky Just Peachy, both of which earn high marks from diners looking to unwind with a drink that perfectly complements their meal experience. And don't forget about the abundant coffee refills that Christina Miller noted, making it the ideal pit stop for your caffeine cravings.

I’m a total sucker for biscuits and gravy, and this place did not disappoint. I went with the mushroom gravy and it was insanely good…rich, flavorful, and comforting in all the right ways. We also tried the Sully Fries, which are seasoned waffle fries smothered in gravy (yes, please). I was impressed that the fries stayed crisp under all that goodness. We grabbed the Lola too, which he really liked. We loved everything so much, we actually ordered biscuits and gravy again to take on the plane before our flight home. Zero regrets.

I haven’t been blown away by a restaurant in a while but this place knows what it’s doing. The food, service, environment, and music were immaculate. Everyone on staff was great to interact with. Everything was clean too and very nicely organized, basically everything you’d except from a well run establishment. BUT THE FOOD STOLE THE SHOW! The Tito’s strawberry lemonade was refreshing and light. Really hit the spot for a hot day. It was a featured drink of the month (which changes every month I believe). I ordered the chicken cordon blu biscuit sandwich and I really was blown away. It was so so flavorful. The chicken was incredibly crispy and It was topped with honey I believe and that really sealed the flavor deal. I’m not a big ban of waffle fries but I ordered them for my boyfriend to have and I can say I’m a fan of THEIR waffle fries. This place knows what they’re doing on every front of running a restaurant! If you’re in Denver you must try this place. You won’t be disappointed.

This place has a pretty cool concept—biscuits and chicken in the morning, then switching it up to pizza at night. It’s an unexpected combo, but it works! The vibe is modern and clean, and the pizza slices are huge. Definitely feels more like a spot where everyone should just pick their own slice with their favorite toppings instead of going in on a whole pie together. That way, everyone gets exactly what they want without overcommitting. Staff was super friendly and the service was great. It’s definitely worth stopping by to check out—especially if you’re in the mood for something different that still hits the comfort food spot.

Cool, eclectic restaurant in a neighborhood that is the same! They have a walk-up window but we used the dining room. Had pizza slices and salads - some of the best I've ever had-- and large portions. The Server was so wonderful and friendly. She made suggestions and was spot on! Biscuit menu is only available in the mornings so going back Friday cuz we don't wanna miss that.

This place is such a fun spot with great decor and wonderful service. They offer all-you-can-drink coffee, and oat milk is available as a dairy-free option. You just pay for one cup and enjoy as many refills as you like—the coffee is local and seriously delicious. Inside the Atomic Cowboy, there are actually two restaurants: one focuses on amazing pizza, and the other builds their menu around fresh, flaky biscuits. You can order from either, which makes for a super flexible and fun dining experience. There are awesome options for kids, fantastic salads, solid burgers, and some truly tasty French toast. We’d definitely come back next time we’re in the area!

Incredible experience and food. The staff were very helpful! I would recommend checking out a location if you’re visiting Denver. Please note that biscuits usually stop being sold at 2!

First customers right at opening 8am at Atomic Cowboy, we were blown away into biscuity bliss by everything we had. It left us curious enough to return same day that night to close out things with some delicious pizza and garlic knots Fat Sully’s. Biscuit French Toast - add fruit compote, Three run double add sides of sausage gravy and hashbrowns. We had one side of biscuit for sausage gravy and the other with strawberry rhubarb jam. Don’t you dare come here and not try the Giant Biscuit Cinnamon Roll (half order if you are solo) For dinner or late night come back for Fat Sully’s. Get the dine in only 26” Pizza to share and please please try the loaded garlic knots.
